Quick Sour Cream Coffee Cake

Ingredients

Cake Batter

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 tsp cinnamon optional
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sour cream
  • 2 eggs

Streusel topping

  • 3 tbsp flour
  • 3 tbsp butter
  • 6 tbsp sugar
  • 3/4 tsp cinnamon
  • 1/2 cup chopped pecans optional

Instructions

Cake Batter

  • Whisk together flour, sugar, cinnamon, baking powder, baking soda and salt.
  • In a separate bowl mix and beat sour cream and eggs.
  • Combine the two mixtures well.
  • Pour into a lightly greased 9"x9" pan and start on the topping.

Streusel Topping

  • Mix flour, butter, sugar and cinnamon and blend together until they crumble. Distribute evenly over the cake batter.
  • Sprinkle chopped pecans.
  • Bake at 350 degrees for 20 minutes.
